Pineapple Sunshine Cake

Or as I like to call it, Summer in Every Bite.

This week’s recipe was borrowed from one of our favorite followers, Donna Y. Donna is the fabulous mother to one of my very best girlfriends and is an awesome inspiration as a career woman who makes living healthy every day look fun and easy. We had an amazing girls night last night and Donna brought this cake over for dessert. Everyone raved over it, and the best part is, it’s only 4 WW points! Amazing! So if you are looking for a delicious and light summer treat, this is the cake for you.


Pineapple Sunshine Cake

Serves 12


1 boxyellow cake mix
1/4 c applesauce
eggs ( or eggbeater equivalent)
1 – 11 oz. can of mandarin oranges in light syrup (undrained)


8 oz light cool whip
1 pkg vanilla instant pudding (3.4 oz)
15 1/2 oz crushed pineapple in it’s own juice (undrained)
  1. In a large bowl stir together ingredients until moist. Beat by hand 2 minutes. Pour batter into a 9 X 13 inch pan (sprayed with non-stick cooking spray). Bake 30-40 minutes until done.
  2. Mix together frosting ingredients until well blended. Spread over cake. Keep refrigerated.
  3. Cool completely before frosting. Makes 12 servings. For Weight Watcher it’s 4 points per serving
