I made this bread earlier this week and it was unbelievably good! Between my family and I, the almond butter banana bread lasted about 36 hours. My kids LOVED it! This healthy recipe is just what you need to get through this snowy weekend!
Almond Butter Banana Bread
Makes 12 slices
- 3 ripe bananas, mashed
- 1 tablespoon honey
- 1 teaspoon vanilla
- 1/4 cup almond butter
- 2 eggs, whisked
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup mini dark chocolate chips
Preheat oven to 350 degrees. Spray an 8×4 inch pan with cooking spray.
Combine bananas, honey, vanilla and almond butter; mix with an electric mixer until smooth. Add eggs and mix until well combined.
Slowly add in coconut flour, baking soda, baking powder, cinnamon, and salt; mix again until just combined. Gently fold in chocolate chips and pour into prepared pan.
Bake for 25-35 minutes or until firm in center. Let cool before serving. ENJOY!
